Steak Restaurant Brighton

Wood & Bone is a wood-fired steak restaurant near Hampton — about eight minutes inland from Hampton Street, at 4 Tabbita Street, Moorabbin. Sher Wagyu and porterhouse over timber, a twelve-hour smokehouse, and free off-street parking.

Hampton has options. This is a different one.

It would be disingenuous to write a page suggesting Hampton has nowhere to eat steak. The Hampton Street strip is one of the better small strips in the bay, and there is a well-regarded local doing steak on it.

So the honest pitch is not that there is nothing nearby. It is that a wood fire and a twelve-hour smoker are a different proposition from a conventional grill, and that eight minutes is a short distance to travel to find out whether you prefer it.

What a timber fire actually changes

Gas is consistent, controllable and easy to run through a busy service. Wood is none of those things. It runs hotter, less evenly, and needs someone watching it all night.

What you get in exchange is a crust with more depth and a faint sweetness that gas cannot produce, and smoke that carries into the meat rather than sitting on the surface. It is more work and it tastes like it — which is the entire argument for the extra eight minutes.

The smoker runs on the opposite principle again: low, slow, twelve hours, brisket that goes in the night before. That is a discipline almost nobody in this stretch of the bay runs alongside a grill.

There is a point midway through a long smoke where the internal temperature simply stops rising for several hours. Every impatient cook turns the heat up at exactly that moment and ruins the result. Waiting it out is most of the skill.

The drive, and the train question

Inland from Hampton Street, roughly eight minutes depending on the lights. Tabbita Street runs off the main road — lit and signed, but easy to overshoot in the dark.

Hampton sits on the Sandringham line, which does not connect to Moorabbin directly. There is no straightforward train option, so this is a drive or a short rideshare. Parking at this end is free, off-street and outside the door.

What is on the menu

Porterhouse, scotch fillet, eye fillet and Sher Wagyu from a Victorian full-blood producer. Cuts change weekly with supply, so it is worth asking what came in rather than ordering from memory.

From the smoker: brisket, pork ribs, smoked lamb and duck, all finite and all capable of running out on a busy Saturday. Order the smoked items early rather than treating them as a second course.

Seafood is bought on what is good rather than a standing order — grilled prawns, salt and pepper calamari, kingfish handled lightly. Sides run sharp and green to cut through the fat rather than compound it.

The wine list is short by design, weighted toward reds with enough tannin to survive char and smoke. Elegant, high-acid reds that sing on their own tend to vanish entirely against a wood-fire crust, which is a mistake plenty of longer lists make.

Midweek is the better visit

Friday and Saturday are busy and the room is loud in the way a full restaurant should be. If what you want is to taste the difference between this and a conventional grill, come on a Wednesday or Thursday when the kitchen has room to breathe and you can talk to whoever is running the fire.

Bringing a group from Hampton

Larger tables work best midweek, and shared smokehouse boards down the middle beat everyone ordering individually. For anything above twenty, the whole venue is available Sunday to Tuesday.

A function venue eight minutes from Hampton with free parking for every guest solves the two problems that make bayside functions difficult: space and cars.

Menus are built with the group rather than picked from a tier, and dietary requirements go in at the enquiry stage rather than being improvised at the pass. Enquire on 0477 099 177 or by email.
